Yes, you read that right…Chicken LOLLIPOP Recipe! This recipe is so fun to make and even more fun to eat. We made our recipe on the BBQ for easy clean up but it can also be made in the oven.
18 medium size chicken drumsticks
Neil Sarap Dayum Seasoning to taste
Pokey Seasoning to taste
Local Omnivore Pirate Spice to taste
1/2 cup Amazing Dad’s BBQ Sauce
1/4 cup Bodacious Tomato Ketchup
1/4 cup Peace River Liquid Honey
Preheat BBQ to medium heat or oven to 350 degrees Fahrenheit.
To turn regular chicken drumsticks into lollipops, you’ll need a sharp knife and a pair of kitchen shears. Start by making a cut all of the way around the leg just below the knuckle, cutting through the skins and tendons using either a sharp knife or a pair of kitchen shears. Push the meat down to the large end and pull/cut the remaining skin and cartilage off the knuckle. You might want to also remove the tiny bone right against the leg. Remove this bone with your fingers or the shears, and trim away the tendons sticking out the top.
We made our Chicken Lollipop recipe on the BBQ, if you’re doing the same, you’ll want to wrap the exposed bone in aluminum foil so that it doesn’t burn. If you are making this recipe in the oven you can skip this step.
Once the foil is in place, generously coat each lollipop with your favourite spices. We used Neil Sarap Dayum Seasoning, Pokey Seasoning, and Pirate Spice.
After the drums are seasoned, place them on the BBQ or in the oven for 20 – 25 minutes to cook. You will want to flip the drums at the half way mark.
Combine the Amazing Dad’s BBQ Sauce, Bodacious Tomato Ketchup, and Peace River Liquid Honey in a large coffee mug.
Once the Chicken Lollipops are cooked, carefully remove them from the BBQ one by one and submerge into the coffee mug with BBQ Sauce mixture. Remove from the mixture and replace onto the BBQ or oven for an additional 5 minutes.
Remove from the BBQ or oven and enjoy!
