Honey Roasted Acorn Squash is the perfect side dish for these colder months. The honey and cinnamon add a delicious sweetness to the squash. You can serve this recipe either in the squash peel as slices, or mashed by removing the squash from the peel. Both are delicious.
As an added bonus, this recipe is guaranteed to make your house smell delicious while it cooks.
If you want to dress up the honey roasted acorn squash, add feta cheese or slivered almonds just before serving to change the flavour.
Ingredients
1 acorn squash
2 tbsp. olive oil
1/2 tsp. salt
1/4 tsp. black pepper
2 tbsp. Peace River Honey
1 tsp. ground cinnamon
Directions
Preheat oven to 450 degrees Fahrenheit. Cover a baking sheet with aluminum foil and spray with nonstick cooking spray.
Slice acorn squash in 1 inch thick slices horizontally. Toss in a bowl with olive oil, salt, and black pepper. Coat each slice of squash evenly.
Place squash slices in a single layer on the prepared baking sheet. Drizzle with Peace River Honey and cinnamon.
Bake squash in preheated oven for 20 minutes. Flip each slice carefully. Continue baking for 10 minutes or until fork tender and well-browned. Serve.
