If you prefer your muffins less sweet, then this recipe is for you! Naturally sweetened using only Peace River Honey makes this recipe a great and healthy snack. You can also freeze these before baking if you want to prepare them in advance. Great way to use up carrots from the garden.
1 3/4 cups flour
1/2 cup Peace River Honey
2 tsp pumpkin pie spice
2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
3/4 cups plain greek yogurt
4 tbsp melted unsalted butter
1 large egg
2 cups peeled, shredded carrots (about 5 medium size carrots)
Line 12 cups of a standard muffin tin with paper liners; set aside. Preheat oven to 350 degrees Fahrenheit.
In a large bowl, stir together flour, pumpkin pie spice, baking powder, baking soda and salt; set aside.
In a separate bowl, whisk together Peace River Honey, yogurt, butter, and egg. Make a well in the center of the dry ingredients and add yogurt mixture. Stir until just combined. Fold in carrots.
Using a medium ice cream scoop, scoop batter into prepared muffin cups. Bake muffins in preheated oven for 20 minutes or until a toothpick inserted comes out clean.
Transfer to a cooling rack and enjoy!
You can also freeze this recipe before baking if you prefer to save it for later.
