2 boneless skinless chicken breasts
2 large eggs
1 cup buttermilk
1/4 cup buffalo hot sauce
1 cup all purpose flour
1/3 cup cornstarch
1 tbsp garlic powder
1 tbsp paprika
1 tbsp onion powder
1 tsp pepper
1 tsp salt
3 cups frying oil
1/2 cup Peace River Hot Honey
1/4 cup buffalo hot sauce
1/4 cup butter
Carefully slice the chicken breasts lengthwise into strips.
In a medium bowl, whisk together eggs, 1/4 cup buffalo hot sauce, and buttermilk. Place chicken strips into buttermilk mixture.
In a separate bowl, whisk together flour, cornstarch, and spices. Dredge chicken strips through flour mixture. Repeat for extra crispy strips. Once coated in the flour mixture, place strips on a wire rack on a baking sheet until all of the strips are dredged.
Heat frying oil in a pan until a temperature of 350 degrees Fahrenheit is reached. Once the temperature is reached, carefully fry the chicken strips for 15 minutes or until golden brown.
While the chicken is frying, make the hot honey sauce. To do so, add the butter, hot honey, and remaining buffalo hot sauce to a medium pot on medium high heat. Bring to a simmer, stirring frequently. To thicken the sauce, combine 1 tbsp corn starch with 1 tbsp water in a small ramekin and add mixture to the sauce.
Carefully remove chicken from the frying pan and plate. Pour hot honey sauce over the chicken and enjoy!
